Why have these system fonts no effect?

I created a new skin and set all the text-related things to 'OS default'.

Then I went to the 'Show me the skin defined system fonts' and
changed these settings one by one to some big crazy font to check
which areas of W10 they affect.

To my surprise, only half the options seem actually do something.
How come?

The only one that I've played with is System Icon Font because it also defines the font Windows Explorer uses for its windows. I (always?) have to go into WBConfig (don't even have to exit Skin Studio first) and apply a different skin, then switch back to the one I'm working on before the changes show. I think I may have to do that a couple of times sometimes. The system fonts can be stubborn.

this makes me very happy.

I thought you might appreciate that little tidbit. Otherwise I'm afraid I haven't spent a lot of time exploring the system fonts.

I have, and it helps to define them, and then assign them. Say, define a bold larger size, and applyy it for captions. This would equal the titlebar font. Icon font is the font Windows explorer uses for all of your files. So they can all be different to actually add some style to those parts that don't get skinned. I've designed skin for the TV that I can read from across the room that way.
