I want to make it clear that I'm not saying its an easy go, like 1v1 a QOT. But it can be done, it does happen, and it happens everyday. I want to present to you a scenario, so that you see why I would reccomend attacking his priests early game, and trying to route him that way. Why dont you explain to me why the strategy is poor, early game, of killing his priests and trying to push him out of the lane? Teach me, oh wise one. Its a sound idea, one that I've used, that does work pretty well. Of course we could also just blargh blargh some more, act like a self righteous douchebag some more, and accomplish nothing but further destroy the frankly impressive balance of this game.

It possible to 1v1 Erebus, survive, and profit with some dg's. He simple isn't that terrifying, if you know what to expect, and keep a level head. Now, certain DG's just aren't built to handle him, at all. I would certainly place Rook within that camp, although I have no doubt that a smart Rook could and will defeat a dumb Erebus. I'm fairly new, but I'm learning pretty quickly, and in some cases providing quite a boon to my team. Generally, this is because I play Sedna, who I basically turn into a heal/regen bot and run around capping flags and securing lanes with my other team mates. As a person who plays Sedna primarily now, I can safely say that generally speaking Regulus is not what terrifies me, maybe in the early game because I tend to save for bishops instead of going for clerics immediately. Regulus is really not built to handle Sedna at all. Its possibly one of the worst match ups concievable.

I don't really see spit as totally overpowered, although its range is a little gnarly. More, I see the problem with Ub as a whole is the synthesis of all his abilities. The slowing claws, the spit (primarily because of range), make a UB very, very difficult to flee from.
